SUGAR FREE, GLUTEN FREE AND TASTES INCREDIBLE...
This amazing recipe is healthy and very easy to make.
I can't take the credit for this one, the recipe originally came from Kalindi and Ben, (yogi friends from Darwin). It looked so nice I just had to make it. I have since made a few changes, the main one being the apple. Originally it was a date slice, I just found it to be too many dates, so I halved the amount of dates and added steamed apple.
INGREDIENTS
1 1/4 cups whole pitted dates
1 1/4 cups steamed apple
3/4 cup of water
CRUMB BASED TOPPING
3 cups gluten free rolled oats (or regular rolled oats)
1 cup almond meal
1/4 cup raw organic honey or other sweetener
1/2 teaspoon ground cinnamon
1/2 teaspoon Himalayan sea salt
1/2 cup natural almond butter
1/2 cup maple syrup
1/4 cup coconut oil, virgin cold pressed
INSTRUCTIONS
Preheat oven to 180 degrees Celsius. Lightly grease a 9 inch square pan and line the bottom and sides with baking paper.
Add the dates and 3/4 cup water to a sauce pan and bring to a boil. Reduce heat and let simmer for 7-8 minutes, or until the dates have softened. Towards the end of the cook time, start mashing the dates with a fork which helps absorb any remaining liquid. Cover and set aside.
Boil apples until soft and discard the water, allow a little time for them to cool down.
In a large bowl, whisk together the oats, almond meal, honey, cinnamon and salt.
In a small saucepan on low heat add the almond butter ,maple syrup, and coconut oil and stir on low heat until smooth.
Add the wet mixture to the dry ingredients, and stir until wet and crumbly.
Press a little over half the crumble mixture into the bottom of the prepared pan.
Spread on the warm date filling and add the apples on top.
Sprinkle on the remaining crumble mixture and press it lightly into the date and apple filling.
Bake for 25 minutes on 180 degrees Celsius or until golden brown. Let cool completely on a wire rack.
Using the edges of the baking paper, lift the slice out of the baking tray and cut into pieces.
